Silken Tofu Chocolate Pudding
I'm getting known around this house for sneaking healthy ingredients into seemingly unfitting places; sauces, soups, baked goods...I get a real pleasure out of making something delicious using ingredients that the kids wouldn't expect, and then waiting for them to announce that the food is, in fact, delicious, and then I unveil what magical ingredient it was made with. I can't tell you how much entertainment I get out of this game.
Well this dessert is no exception to this. Full of sneaky silken tofu, it's a chocolate pudding you wouldn't even suspect is chock full of plant-based protein.
There's nothing fancy going on here, and you've probably already seen this basic recipe before. But let me just be here to qualify that this dessert is really as good as they say. Ingredients
- 1, 12.3 oz, box silken tofu
- 2 Tbsp maple syrup or honey
- 2 Tbsp cocoa powder
- Pinch of salt
- 3.5 oz dark chocolate
- 1 Tbsp butter
Preparation
- Melt: melt butter and chocolate together in the microwave or a double boiler
- Blend Ingredients: Add everything to the blender and blend until a silken smooth pudding
- Serve: Divide the pudding between 3-4 bowls or spread into a pie crust. Top with desired goodies. Here’s a few suggestions:
- Coconut shreds
- Blueberries or strawberries
- Figs and caramel drizzle
- Rose or hibiscus powder
- Nuts
